A fun tradition to do with your little ones is baking homemade Christmas cookies. It's not only delicious to eat, but your house will also smell wonderful! Equipment:
The only things you need are a bowl, a mixer, a rolling pin, parchment paper, and cookie cutters. Use fun cookie cutters, like a gingerbread figure or a Christmas tree. Of course, you can use any shape you like.
Ingredients:
- 125 grams of unsalted butter at room temperature
- 90 grams of light brown sugar
- 230 grams of honey
- 375 grams of flour
- 1 teaspoon of baking soda
- 2 tablespoons of gingerbread spice mix
- 1 teaspoon of cinnamon
- 100 grams of dark chocolate chips (small chocolate balls that you can find in the supermarket)
How to make it:
For these gingerbread cookies, relatively a lot of honey is used. You can't simply replace this with sugar, so if you prefer not to use honey, you can also choose to use maple syrup.
In the bowl of a mixer, combine the butter and sugar, and beat for 10-12 minutes until it becomes white and creamy. Scrape the sides of the bowl, add the honey, flour, baking soda, gingerbread spice mix, and cinnamon. Beat until you have a smooth dough.
If the dough is too soft or sticky to roll out, you can refrigerate it until it becomes firmer. Add the chocolate to the dough.
Preheat the oven to 160°C.
Line 2 baking sheets with baking paper. Dust the countertop with some flour and roll out the dough. Cut out the cookies and place them on the baking sheets, leaving some space between them for spreading. Bake for 10-12 minutes or until they are golden brown.
The cookies will only become hard as they cool, so give them some time before removing them from the baking sheet.
